1 3 The arrival of snow on 1st December. Pruning our Gravières. Controlling the malolactic fermentation. The cycle will start over and 2018 is already being prepared. This year, the snow began early December in our vineyards. The vines were dressed in their white coats, a beautiful sight to see. Winter is on the way. Negative temperatures and fog are frequent, and even the rain is back after many dry fall months. This cold period, allows the plant to rest. For us, it is the moment to start the pruning of our 22 acres of vines. This will take from December to March until we are done. The planting density is 4000 vines per acre in the Côte de Beaune, the task will be long. Approximately 90000 vines will have to be pruned. It is also a good time to reorganize a few things at the Domaine. With year end brings inventory of the cellar and general cleaning. For their part, the wines are aging in barrels. The malolactic fermentations of 2017 have started and some are already done. It seems that they are going faster than usual this year. This fermentation process is done for all of our wines by lactic acid bacteria. By doing this, it softens the acidity and stabilizes the wines. For the 2016 vintage, bottling is almost here. The wines are ready and the date is planned. The first 2016’s will be bottled early January, after vacation. Now is the time for the Domaine Jessiaume team to wish you a very happy festive season.
