Tasting Notes
The Santenay Vieilles Vignes 2022 from Domaine Jessiaume stands out with its deep garnet red color. On the nose, it offers a complex and captivating bouquet of ripe black fruits such as blackberry and blackcurrant, complemented by subtle spicy and forest floor notes. On the palate, this wine reveals a beautiful structure with silky, well-integrated tannins, supported by fresh acidity that perfectly balances the ensemble. The finish is long and persistent, marked by nuances of fruit and spices. A generous and elegant wine, promising excellent aging potential but already delightful to enjoy now.

Winemaking
After sorting in the vineyard and in the winery, the grapes are de-stemmed and then directly put in tank. Cold pre-fermentation maceration is performed for 5 days. The spontaneous fermentation then starts. The grapes will stay in tank for roughly 3 weeks during alcoholic fermentation. The wine is then put in oak barrels by gravity (20% new oak) for 12 months. No fining is performed.
